Lay the onion and carrots in the base of the slow cooker, then place the chops on top. Scatter over the garlic, rosemary and mint, then mix the stock and redcurrant jelly together and pour over everything. Cover and cook on low for 8 hours, until the lamb is fall-apart tender and the veg soft, then serve with the rich juices spooned over.
