This comforting one-pot meal is perfect for chilly evenings and family dinners.Ingredients* 2 pounds (900g) beef chuck, cut into 1½-inch cubes* 2 tablespoons all-purpose flour* 1 teaspoon salt* ½ teaspoon black pepper* 2 tablespoons olive oil* 1 large onion, chopped* 3 cloves garlic, minced* 4 cups beef broth* 2 tablespoons tomato paste* 1 tablespoon Worcestershire sauce* 1 teaspoon dried thyme* 2 bay leaves* 4 medium Yukon Gold potatoes, peeled and cubed* 4 large carrots, sliced* 2 celery stalks, sliced* 1 cup frozen peas* 2 tablespoons chopped fresh parsley (for garnish)Instructions1. Toss the beef with the flour, salt, and black pepper until evenly coated.2. Heat the olive oil in a large Dutch oven over medium-high heat.3. Brown the beef in batches, about 3–4 minutes per side.
